Explore mezcal's many faces — from Oaxacan terroirs to more uncommon soils, from agave to rare raicilla and sotol. Every dish has its own mezcal pairing, and our cocktails carry a Latin soul: South American kitchens, poured into a glass.

Our Story
Vincent and Thomas grew up with the abundant Argentinian asados of Pipinas, where family and friends gathered around good barbecued food. In 2015 that same passion became Salmuera — inspired by the dusky barrio squares of Mexico and the rugged romance of Argentina.

Our Venue
A protected monumental building from the 1600s — once home and taproom of a Dutch Golden Age icon. Having a drink at our bar has been the same for over 300 years. The past ten, only with more mezcal.
Behind the velvet curtains
Our private dining room for special occasions and get-togethers — up to 12 guests, minimum 8. For groups from 10 we offer set menus.
